Leverage the top compartment’s pressure/pressureless operation to handle delicate vegetables and seafood without overcooking, or switch to pressure for faster batch work. Manual controls and a 60-minute timer help chefs standardize results across stations and dayparts. This flexible setup supports everything from à la carte finishing to bulk prep.
Designed for reliability, the EDA-3 includes automatic blowdown and a CSD-1 code package to simplify maintenance and help meet compliance needs. A built-in water filter system, “Y” strainer condenser feed, and split water line protect components and promote consistent performance. Sturdy 6″ legs with flanged feet provide a secure, level installation.
