Briess Caramel 40L is a drum-roasted specialty malt that imparts a beautiful golden-to-amber color and a clean, sweet caramel flavor to the beer. Kilned to 40° Lovibond, it provides enhanced body, mouthfeel, and foam stability without the burnt or acrid notes of darker crystals. It is the essential grain for balancing hop bitterness in American Pale Ales, IPAs, and Amber Lagers. Brewery Mash Tip: Use Caramel 40L at 5-15% of the total grist for depth of color and residual sweetness. Because the sugars are already caramelized, this malt does not require mashing for sugar conversion (it can be steeped), but including it in the main mash ensures the best integration of the foam-active proteins. It pairs perfectly with both American and European base malts.
