Description
Dingemans Cara 45 is a premium Belgian crystal malt that imparts a rich reddish-amber color and a clean, sweet caramel flavor to the beer. At 45° Lovibond, it is the classic choice for Belgian Abbey Ales, Dubbels, and Ambers where you want to add body and foam stability without the burnt character of darker roasted grains. It contributes unfermentable sugars that round out the mouthfeel and balance the spiciness of Belgian yeast strains.
Brewery Mash Tip: Use Cara 45 at 5-15% of the total grist. Because the sugars are already caramelized, this malt can be steeped for extract brewing, but including it in the main mash at 150-154°F provides the best integration of color and body. It pairs perfectly with Dingemans Pilsen or Special B malt for complex Belgian profiles.
