Each compartment accommodates (5) 18″ x 26″ sheet pans or (10) 12″ x 20″ pans on universal slides, spaced 4-1/2″ on center and adjustable on 1-1/2″ increments to match changing menus. The Humi-temp heat & humidity system with an adjustable thermostat helps maintain texture and presentation across proteins, sides, and baked items. A removable humidifier pan speeds changeovers and cleaning between dayparts.
Built for daily use, this insulated stainless steel cabinet rolls smoothly on 5″ casters with push bar handles, while a wraparound bumper protects walls and equipment. Flush mounted doors with edgemount latches seal in heat during frequent openings. Use it to stage courses, back up the line, or transport hot food safely across your facility.
