Red Star Premier Cuvee is a high-performance yeast strain (Prise de Mousse) prized for its clean fermentation and exceptionally high alcohol tolerance. This 5g sachet is ideal for 5-6 gallon batches. Premier Cuvee is a very fast and robust fermenter that produces remarkably clean flavor profiles, making it the perfect choice for high-gravity wines, sparkling wines, and stuck fermentation restarts. It is highly flocculent and settles firmly, resulting in brilliantly clear beverages without extensive filtration.
Wine Maker’s Tip: This strain is a neutral fermenter and will not add significant esters or phenolics, allowing the fruit character to be the star. For the best results in high-gravity batches, follow a Staggered Nutrient Addition (SNA) schedule. Maintain fermentation temperatures between 45°F and 95°F. Rehydrating in sterile water at 95-105°F for 15 minutes ensures the highest viable cell count for a vigorous start.
