SafBrew BR-8 is the first dry Brettanomyces bruxellensis yeast available to brewers. This 100g bulk brick is designed for secondary fermentation in bottles or barrels. BR-8 provides the classic “Brett” character—phenolic notes of horse blanket, leather, and funk—that evolves over time. Unlike liquid cultures, this dry format offers a stable shelf life and consistent cell counts, making it ideal for professional breweries producing Belgian-style Sours, Lambics, and Farmhouse Ales.
Brewery Tip: BR-8 is designed for secondary use; do not use it as a primary fermenter for standard wort. Pitch it into the beer once primary fermentation is complete. Because it consumes complex sugars that standard yeast cannot, ensure you use heavy-duty Belgian bottles to prevent bottle bombs as the pressure builds during aging. Character typically takes 3-6 months to develop.
