SafSour™ LP-652 is a high-purity Lactobacillus plantarum strain specifically selected for its ability to produce clean, sharp lactic acid. This 100g bulk brick is the ideal solution for commercial breweries producing Berliner Weisse, Gose, and other sour styles via kettle souring or co-fermentation. LP-652 is prized for its high temperature tolerance and rapid acidification, allowing brewers to reach target pH levels (3.2 – 3.6) in as little as 24-48 hours without the risk of unwanted funk or off-flavors.

Brewery Tip: LP-652 is hop-sensitive; ensures your wort has less than 10 IBU for successful souring. For the best results, pitch into un-hopped wort at 86-104°F (30-40°C). Once your target pH is reached, boil the wort to kill the bacteria before proceeding with a standard ale yeast fermentation. This ensures a clean tartness while protecting your brewery equipment from cross-contamination.
