The 48″ griddle features a 3/4″ polished steel plate for consistent heat transfer, while a 3″ grease trough, removable grease can, and crumb tray simplify cleanup between rushes. Two open burners with pilot lights and a low simmer feature sit under durable cast iron grates for reliable pan work and sauce holding.
Batch-cook with one convection oven powered by a 1/2 HP blower motor and three chrome racks, and finish in the standard oven with a porcelain interior and included rack. Manual controls keep operation straightforward, and stainless steel front, sides, backguard, shelf, 3-1/2″ landing ledge, and kick plate stand up to daily service.
