Description
Simpsons Crystal Dark Malt is a world-class British caramel malt that imparts a beautiful deep mahogany color and complex notes of intense dark toffee, roasted nuts, and subtle raisins. Kilned to approximately 70-80° Lovibond, it provides enhanced body and foam stability while contributing a powerful “malty” depth. It is the essential specialty grain for traditional English Strong Ales, Porters, and Dark Bitters, helping to balance hop bitterness with a rich, dark sweetness and professional complexity.
Brewery Mash Tip: Use Crystal Dark at 3-10% of the total grist. Because the sugars are already caramelized inside the kernel, this malt does not require mashing for sugar conversion (it can be steeped), but including it in the main mash ensures the best integration of color and body. It pairs exceptionally well with East Kent Golding hops and English ale yeast to create a classic British profile.
